Apple Roses, NadaMoo vanilla ice cream, and Pumpkin Spice - Oh My!

Apple Roses, NadaMoo vanilla ice cream, and Pumpkin Spice - Oh My!

Hello Wander Life fam! I came across a couple of adorable videos circling the interwebs showcasing how to make "apple rose pastries". I decided to give it a try with all of my Paleo (and low carb!) ingredients instead of the usual recipe. After lots of trial and error, the recipe below finally succeeded in producing a delicious, low carb, dairy free, and Paleo treat!

What you'll need:

  • 1 Large apple
  • 1 cup almond flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons Wander Life Coconut Creamer, Pumpkin Spice Flavor
  • 1 tablespoon coconut oil
  • 1 large egg
  • 2 tablespoons honey (optional)

Directions:

  • Set oven to 350 degrees
  • Slice the apples into 1/4 inch slices. Place slices in a bowl with water and squeeze half a lemon into the bowl. Microwave for about 3 minutes until slices are flexible
  • While the apples are in the microwave, whisk all of the dry ingredients together in a bowl
  • Add the coconut oil, honey, and egg to the dry ingredients and thoroughly mix
  • Stick the dough in the freezer for just a few minutes to let it cool off
  • Put parchment paper on the counter, and sprinkle it with a bit of almond flour
  • Take the dough out and mush into long rectangles
  • Place the apple slices near the top of the dough rectangles, creating an overlapping pattern over the dough
  • Roll the apples and the dough into rose shapes and place them in a cupcake baking sheet (with or without paper cups)
  • Sprinkle Wander Life Coconut Creamer, Pumpkin Spice flavor on top of apple roses
  • Bake for 40-45 minutes
  • Pair with NadaMoo vanilla ice cream and sprinkle more Wander Life Coconut Creamer Pumpkin Spice on top of the ice cream
  • Drizzle with some more honey if you like things a bit sweeter!
  • Enjoy!

I particularly love this recipe because I am SO in the mood for it to be fall, but it is still 90 degrees in Austin so the ice cream is a nice addition. Love to hear your thoughts on this low carb delight! Comment below :)
