Ahh Valentine's Day. Love it or hate it, the holiday comes around every year. My husband and I usually skip the typical fancy Valentine's Day dinner and opt for a quiet evening in while cooking together over a bottle of wine. Generally I think the holiday is rather silly, but at the same time, any excuse to show a little extra love to your SO or besties can't be a bad thing right?
One of my resolutions this year (yes I am still attempting to stick to mine) is to generally be more positive (read: less cynical) and continue investing in the relationships that matter the most while simultaneously expanding my circle! So I teamed up with a couple of local badass ladies to throw a Galentine's Day themed healthy (kind of) brunch with some of our favorite recipes! There's no better way to spend time with friends and loved ones than when you're cooking together (especially when mimosas are involved :D ).
I partnered with the amazing Ms. Emily over at Fry By Design and Mrs. Erin from Kokonut Yogurt to create a gorgeously styled and deliciously healthy brunch for a few of our closest ladies! Emily was in charge of the decor and Lordie she did not disappoint! Everything was tastefully decked out in soft pinks with lots of greenery! Take a look at her blog post for her styling tips!
Erin brought her famous dairy-free coconut yogurt to create some parfaits that were as tasty as they were adorable. She used goji berries, almonds, paleo granola, bananas, and berries to curate these custom Paleo delights!
Of course, I brought Wander Life Coconut Creamer to use in our coffee as well as to make our adorable little heart shaped, Paleo waffles! All of the recipes can be found below along with extra photos from our fun girl's brunch!
Paleo Heart Shaped Waffles with Dairy Free Icing!
- 4 eggs
- 2 cups almond flour
- 3 TBSP Vanilla Bean Wander Life Coconut Creamer
- 1/4 Cup water
- pinch of salt
- 1/2 teaspoon baking soda
- 2 TBSP of honey (optional)
Simply mix all of the dry ingredients together in a bowl and then add all the wet ingredients together and mix thoroughly until all of the clumps are out. Spray some organic coconut oil onto your waffle iron and cook for 1-2 minutes!
Dairy free icing :
- 1 cup canned organic coconut cream
- 1/2 cup powdered sugar
- 1 drop of red food dye (optional for coloring)
Put a metal mixing bowl in the freezer for 10 minutes. Then whisk the coconut cream, powdered sugar, and food dye together until it becomes thick. Use freely on waffles!
- 1 cup Kokonut yogurt flavor of your choice!
- 2-3 TBSP of Paleo Granola
Simply add a layer of yogurt in a mason jar, add a layer of chopped bananas, add another layer of yogurt, then add granola, more yogurt, then top off with berries/honey/almonds and Voila!
