I have been DYING for a waffle maker for months now and I finally bought one! I was weirdly obsessed with making waffles in high school but I can't afford to eat all those refined sugars and carbs these days so I went to work to create a low carb, keto, and gluten free version of the waffles I loved so much in my teens.
Y'all, I finally created the BEST Keto waffle recipe! I found a few different recipes online that I combined and tested a few times to figure out which combination worked/tasted the best. Recipe below, thank me later ;D
4 large Eggs
4 TBSP Almond Flour
3 TBSP Vanilla Wander Life Creamer
1 TBSP Grassfed Ghee
1 TSP Baking Powder
Mix all ingredients thoroughly (or use a nice hand blender to really froth it up), spray waffle maker with organic coconut oil, pour batter into waffle maker and close for 1 minute or so (time will change depending on waffle maker). Let cool and enjoy :D
PS : For added bonus points, add some fresh fruit and coconut cream on top!
